over halfway there

September 1st, I started a new venture. Some call it a "diet", others call it a "lifestyle" and I'm not sure what I'm calling it. There's a ton of back story here but I won't bore you with the last 26 years of signs and symptoms that have led me to discover that I've been poisoning my body and I'm finally motivated enough to make a change. A hard one at that. 

I've struggled with asthma, eczema and a long list of other symptoms my whole life. The lightbulb went off when my friend, Leslie, was in town a few months ago. I was chatting with her about a few symptoms, one being my weird tounge and my constant dark circles under my eyes. She began to tell me that I must have an issue in my Gut. It didn't hit me until she sent me an article weeks later on my dark circles that are a known link to allergies and is diet related.

I searched the web and read a ton of articles and things on "Leaky Gut" which is what I believe I have. I found this Doctor, Amy Myers, online from Austin, TX. Her website is FULL of resources on autoimmune disorders/leaky gut and help for people like me searching for answers.  I got her book and within a week I was starting her elimination diet called, The Myers Way. I'm currently halfway though the first 30 days.

It's hard to say what has been causing all my chronic inflammation, allergies, struggle with breathing and my skin. My money is on either eggs, gluten or dairy. I'm off these things until I see a drastic change in my body. In 14 days I will get to add in other things I've been eliminating, like peanut butter (yum) and occasionally some honey ;-)

Bunless Burger

I LOVE THIS MEAL. Beef Burger over a bed of spinach, covered with caramelized onions and avocado. With a side of bacon wrapped green beans.

Chicken Coconut Curry

My personal favorite. Chicken with sweet potatoes, onions and avocado topping. YUM.

Shrimp & Veggie Stir Fry

A quick and easy lunch for me. Shrimp is frozen from Costco. 

Creamy Basil Pesto Sauce over Spaghetti Squash

Tonight wasn't a favorite meal, but a first! My first time cooking with Spaghetti Squash. Not bad. I enjoyed this meal but it did need some extra salt ;-)

Surprisingly, I've taken to this new "lifestyle" with grace and ease (thanks to the support of my loving Husband). I have my moments where I just want a cinnamon roll from the Old School Bakery. But I know this benefit outweighs the cost. I want to be healthy and live it to the fullest. 

I'm thankful for this life I have and I'm finally taking care of myself the way I need to in order to be a good friend, daughter, wife and mother. Oh, and the weight I've lost is just the cherry on top!
